Live Mahi is green in color with reflective scales which give it a very bright and lively look. Its flesh is white and moist, with a slightly sweet flavor. It is often thought of as Hawaiian due to its name, which means strong; but CSS Mahi is found in the warm waters of Peru. Mahi is very versatile due to the density of its meat.
